Serait fabriqué au départ de pigments caroténoïdes jaunes foncé à rouges foncé, principalement la crocine et la crocétine issus des fruits de gardénias. La couleur bleue résulterait d’une mise en réaction avec un acide alpha-aminé (soja ? Les acides α-aminés font partie des constituants protéiniques) en présence d’une enzyme.

- The color additives Astaxanthin, Astaxanthin dimethyldisuccinate, Ultramarine blue, Canthaxanthin, Haematococcus algae meal, Synthetic iron oxide, Dried algae meal, Tagetes (Aztec marigold) meal and extract, Corn endosperm oil, Paracoccus pigment, and Phaffia yeast are approved for specific uses in animal food (see 21 CFR 73.35, 73.37, 73.50, 73.75, 73.185, 73.200, 73.275, 73.295, 73.315, 73.352, and 73.355, respectively).

- Color additives listed in 21 CFR Parts 74 and 82 must be analyzed and batch certified by FDA before they can be used in any FDA-regulated product marketed in the U.S. This requirement applies to products imported into this country as well as those manufactured domestically. Manufacturers of certified color additives must include on the label the name of the certified color additive, a statement indicating general use limitations, any quantitative limitations in products, and the certification lot number assigned to the batch. Straight colors required to be certified are listed in 21 CFR Part 74. Most lakes are provisionally listed under 21 CFR 81.1 for use as listed in 21 CFR 82.51 (food, drugs, and cosmetics), 21 CFR 82.1051 (drugs and cosmetics), or 21 CFR 82.2051 (externally applied drugs and cosmetics). All FD&C Red No. 40 lakes are permanently listed under 21 CFR 74.340 (food), 74.1340 (drugs), and 74.2340 (cosmetics). FD&C Blue No. 1 and FD&C Yellow No. 5 aluminum lakes for drug and cosmetic use are permanently listed in 21 CFR sections 74.1101, 74.1705, 74.2101, and 74.2705.

Le bleu de Gardenia est connu comme étant sûr, il n’y a pas de limite au dosage d’ingestion. Il n’existe aucune preuve démontrant que la consommation nuira à des groupes particuliers, notamment les nouveau-nés, les enfants, les femmes enceintes et d’autres groupes vulnérables. Il est sans danger de l’utiliser dans les aliments et les boissons comme additif alimentaire sans effets secondaires. Cependant, nous recommandons toujours aux consommateurs de consulter des experts en ingrédients avant d’utiliser une grande quantité de cet ingrédient sur une longue période. Il peut y avoir des effets secondaires à forte dose.
Avantages
La crocine et la crocétine naturelles que l’on trouve auprès du gardénia notamment ont des propriétés antioxydantes et anticarcinogènes, cependant le bleu de gardénia commercial, à l’instar de nombreux additifs dits d’origine naturelle, peut contenir des matières indésirables (notamment des cendres).

- Jus de chou rouge: Le jus violet extrait du chou, associé avec du bicarbonate, vire au bleu. Émincez quelques feuilles de choux rouge, Faites-les cuire à la vapeur, Broyez-les.
- Spiruline. Algue marine dont on extrait le pigment bleu vif. Sensible à la chaleur, on l’utilise dans des préparations plutôt tièdes, voire froides.
- Pétales de fleurs de Pois bleus (Clitoria ternatea): La décoction de ces pétales de fleur, offre une belle teinte bleutée. Ils sont commercialisés en pétales séchés pour en faire de la tisane (sans théine). On les retrouve aussi sous le nom de pois papillon ou pois savane.

Blue Gardenia est un des colorants bleu naturel qui sont plutôt rares dans le monde. Il peut facilement se dissoudre dans l’eau, l’éthanol en solution et solution de glycol de propylène, ne peut pas se dissoudre dans un solvant organique. Il est presque insipide et a une faible capacité de l’absorption d’humidité. Le colorant est stable dans un milieu lorsque la valeur du pH est comprise entre 4 à 8. Il a une bonne résistance à la température, mais pas à la lumière.
