L'Autorité Européenne de Sécurité des Aliments (AESA/EFSA) a déterminé que certains groupes de population ont un risque élevé de consommer trop de E210 - Acide benzoïque.
- Cancérigène potentiel (E210 et les sorbates E211..213 sont listés au nombre des additifs possiblement cancérigènes a l'Association pour la Recherche Thérapeutique Anti-Cancéreuse (ARTAC, France)) : isolément et/ou associé à la vitamine C par formation de petites quantités de benzène.
- Mutagène in vitro sur des cellules humaines, activité clastogène,
- Neurotoxique potentiel, contient des résidus de substances organochlorées neurotoxiques,
C'est une source d'hyperactivité chez l'enfant (voire aussi les adultes), la dose journalière admissible (DJA) serait facilement dépassée chez les enfants en bas âge, et l'association avec des colorants est soupçonnée d'amplifier les symptômes.
Nota : De l'acide benzoïque est autorisé dans la préparation même des colorants!
L'acide benzoïque et les sorbates pourraient réagir avec d'autres substances présentes dans l'alimentation, notamment la vitamine C (acide ascorbique, E300..303), l'acide érythorbique (acide d-ascorbique, E315..318), le bisulfite de sodium (E222), la tartrazine (E102), l'acide sorbique (E200), On parle aussi de perturbations digestives, d'inhibition des enzymes digestives, d'irritations, de limitation du taux de la glycine dans l'organisme, et d'influence possible sur la croissance.
Effet secondaire déclaré
L'effet secondaire le plus couramment rapporté est d'ordre allergique : asthme, urticaire, symptômes cutanéo-muqueux et respiratoires sur des personnes sensibles ou intolérantes aux salicylates. En association avec certains colorants les benzoates seraient impliqués dans un grand pourcentage de cas du syndrome d'hyperactivité chez les enfants.
Mieux évité par les personnes ayant des réactions allergiques car il peut causer une éruption cutanée similaire à l'éruption d'ortie avec de grandes quantités causant également une irritation gastrique. Lorsqu'il est combiné avec la tartrazine (E102), il provoque une réponse hyperactive très élevée chez les enfants. Peut causer l'asthme, en particulier chez ceux qui dépendent de médicaments stéroïdes de l'asthme, est également réputé pour causer des troubles neurologiques et de réagir avec bisulphite de soufre (E222)

Avantages
Les benzoates sont souvent préférés, en raison d'une meilleure solubilité.
Pourrait avoir des avantages médicinaux
À de plus grandes doses, le benzoate de sodium peut aider à traiter certaines conditions médicales.
Le produit chimique réduit les taux sanguins élevés de l'ammoniac des déchets, comme chez les personnes atteintes d'une maladie du foie ou de troubles héréditaires du cycle de l'urée — conditions qui limitent l'excrétion d'ammoniac par l'urine.
En outre, les scientifiques ont identifié des façons par lesquelles le benzoate de sodium peut avoir des effets médicinaux, par exemple en liant des composés indésirables ou en affectant l'activité de certaines enzymes qui augmentent ou diminuent les niveaux d'autres composés.
Voici d'autres utilisations médicinales potentielles du benzoate de sodium qui font l'objet de recherches :
Schizophrénie : Dans une étude de six semaines chez les personnes atteintes de schizophrénie, 1 000 mg de benzoate de sodium par jour, parallèlement à la pharmacothérapie standard, ont réduit les symptômes de 21 % par rapport au placebo. Une étude similaire a également montré un avantage.
Sclérose en plaques (SEP) : Les études sur les animaux et les éprouvettes suggèrent que le benzoate de sodium pourrait ralentir la progression de la SP. Il peut s'agir de stimuler la production de myéline, le couvercle neurotoxique protecteur endommagé dans la SP
Dépression : Dans une étude de cas de six semaines, un homme avec la dépression principale donné 500 mg de benzoate de sodium quotidienne a eu une amélioration de 64% des symptômes, et les balayages de MRI ont montré la structure améliorée de cerveau liée à la dépression.
Maladie de l'urine de sirop d'érable : Cette maladie héritée inhibe la dégradation de certains acides aminés, faisant sentir l'urine comme le sirop. Une étude menée chez un tout-petit a révélé que le benzoate de sodium par voie intraveineuse (IV) a été
Trouble panique : Lorsqu'une femme atteinte d'un trouble panique — caractérisée par de l'anxiété, des douleurs abdominales, une oppression thoracique et des palpitations — prenait 500 mg de benzoate de sodium par jour, ses symptômes de panique ont été réduits de 61 % en six semaines.
Malgré les avantages potentiels, le benzoate de sodium peut avoir des effets secondaires, y compris des nausées, des vomissements et des douleurs abdominales.
En outre, les doses médicinales de benzoate de sodium peuvent épuiser votre corps de la carnitine d'acide aminé, qui joue un rôle critique dans la production d'énergie. Cela peut rendre nécessaire de prendre un supplément de carnitine.
Pour ces raisons, le benzoate de sodium n'est administré qu'à titre de médicament d'ordonnance à des doses soigneusement contrôlées et avec une surveillance continue.

Pharmaceutique
Présent dans de nombreux médicaments contre la toux et un antifongique dans les ondulants.
Le benzoate de sodium est utilisé comme agent de conservation dans certains médicaments en vente libre et sur ordonnance, en particulier dans les médicaments liquides comme le sirop contre la toux.
En outre, il peut être un lubrifiant dans la fabrication de pilules et rend les comprimés transparents et lisses, les aidant à se décomposer rapidement après que vous les avalez.
Enfin, de plus grandes quantités de benzoate de sodium peuvent être prescrites pour traiter des taux sanguins élevés d'ammoniac. Autre produits
L'acide benzoïque et les benzoates E210..213 sont listés comme conservateurs au Codex alimentarius, et peuvent - selon sa vision - affecter de nombreuses denrées et boissons, y compris les compléments alimentaires, les boissons alcoolisées et les fruits secs. On les utilise aussi dans la fabrication des colorants (E1xx), des arômes, ainsi que des enzymes et de la présure.
Dans l'U.E. comme aux Etats-Unis, l'acide benzoïque et les benzoates sont exclus de la filière d'alimentation biologique (angl. organic food).
L'acide benzoïque et ses benzoates sont insérés dans de nombreux pharmaceutiques y compris des suppléments en vitamine C, ainsi que dans les cosmétiques, les agrochimiques, les pesticides, les arômes dans le tabac. Les chats seraient nettement plus vulnérables aux benzoates, évitez-leur ces additifs ainsi que les restes de nourritures humaines en contenant.
Il a également des utilisations industrielles. L'une de ses plus grandes applications est de dissuader la corrosion, comme dans les refroidisseurs pour moteurs de voiture.
De plus, il peut être utilisé comme stabilisateur dans le traitement photo et pour améliorer la résistance de certains types de plastique.
