
Le nitrate de sodium est connu sous le nom de salpêtre du Chili ou du Pérou à cause de son abondance dans ces pays et pour le distinguer du salpêtre ordinaire qu’est le nitrate de potassium.
Il est largement utilisé dans l’agriculture comme engrais (son faible coût en fait une source d’azote très accessible). Dans les années 1800 et au début des années 1900, le nitrate de sodium a été utilisé dans la fabrication de la poudre à canon. Il est aujourd’hui encore utilisé dans les feux d’artifice, les carburants solides pour fusées, dans le traitement des eaux usées, et comme conservateur alimentaire (à polémique).

Voir le nitrate de potassium, ou salpêtre E252. Le nitrate de sodium est -de plus- listé au nombre des carcinogènes à la NLM américaine (National Library of Medicine).
En dose élevée, les nitrates formant dans le corps des nitrites mènent à la cyanose, caractérisée par le bleuissement typique des lèvres, des muqueuses et de la peau. Le passage de l’oxygène dans les globules rouges en est diminué ce qui provoque en particulier chez les enfants une insuffisance respiratoire aiguë pouvant conduire à une mort par étouffement (terme technique : méthémoglobinémie). Dans le système digestif, le nitrite formé par le nitrate peut être transformé en nitrosamines cancérigènes. On connaît déjà ce phénomène du nitrate dans l’eau potable. Les nitrosamines peuvent aussi se former lorsqu’on cuit de la charcuterie saumurée avec du fromage.
Effets secondaires
L’ingestion de hautes doses pourrait aussi inhiber le fonctionnement de la glande thyroïde.
Les nitrates en eux-mêmes ne sont pas toxiques, mais lorsqu’ils sont ajoutés à la viande, ils se décomposent en nitrite. Le nitrite réagit ensuite avec les protéines pour produire des composés N-nitroso qui sont cancérigènes chez les animaux de laboratoire, les preuves ne sont pas concluantes quant à leur potentiel de provoquer un cancer (tel que le cancer de l’estomac) chez l’homme. Les effets du nitrate sur la santé comprennent une teinte bleuâtre sur la peau et les lèvres, une faiblesse, un pouls rapide, un manque de conscience, le coma et la mort. Les nourrissons sont beaucoup plus sensibles aux nitrates que les adultes. Une exposition à long terme à des niveaux inférieurs de nitrates entraîne une augmentation de la quantité d’urine, des dépôts d’amidon et des saignements de la rate. Le nitrate ne doit pas être utilisé chez les nourrissons de moins de 3 mois.
Suis-je concerné?
A cause de leur forte toxicité, les nitrates peuvent seulement être utilisés en combinaison avec du sel de cuisine pour saumurer la charcuterie et les saucisses et ainsi les conserver. Les sels contenant du nitrate fournissent l’arôme typique de la saumure et la couleur rouge de la charcuterie pouvant résister à la cuisson. Le E 251 et le E 252 peuvent aussi être utilisés pour la conservation de fromage à pâtes pressées cuites, pour les imitations de fromages et pour les poissons conservés. A cause des risques nommés ci-dessus, les valeurs prescrites sont très limitées (50– 250 milligrammes par kilogramme d’aliment).

Si toutes les sources de nitrate alimentaire sont prises en compte (additifs, présence naturelle dans les aliments, contaminants environnementaux), les personnes de tous les groupes d’âge présentant une exposition moyenne à élever sont susceptibles de dépasser le niveau de sécurité. Les nitrates peuvent être convertis en nitrite dans la salive. Or, lors de la digestion, les ions nitrites réagissent avec les acides aminés issus des protéines pour former des nitrosamines. 4 de ces substances sont classées cancérogènes probables (avec, en particulier, un risque accru supposé de cancer du côlon). Leur usage intentionnel est donc fortement restreint. Les ions nitrites peuvent également réagir avec le fer pour former du fer nitrosylé, lui aussi promoteur du cancer du côlon. L’Autorité européenne de sécurité alimentaire (Efsa) indique toutefois que les niveaux d’utilisation autorisés sont censés être suffisamment protecteurs. Une consommation élevée de nitrites augmente enfin la méthémoglobinémie, et une vigilance s’impose en particulier chez les enfants forts consommateurs.
